If you love chocolate (and who doesn’t?) but don’t like the way you feel after eating those butter, flour and brown sugar laden chocolate chip cookies, here’s a healthy alternative. This recipe keeps it simple and raw, turning raisins and walnuts into an amazing chocolate-y treat. The raw walnuts in the recipe provide an excellent source of omega-3 fatty acids, the raw raisins provide the sweetness, and the cocoa powder provides, well, the chocolate. These treats are packed with energy and taste. No oven is needed; just a food processor. One batch makes a dozen heart healthy raw cookies.
Ingredients
1 cup raisins
¾ cup raw walnuts
¼ cup unsweetened cocoa powder
Dash of sea salt
Instructions
Combine ingredients together in a food processor. Blend until everything sticks together into a thick “dough.” Roll into 12 balls about an inch in diameter. Flatten the balls onto parchment paper. Place in the freezer for a half hour to firm before serving. Keep refrigerated.
